I miiiiiight have a little "internet problem", one that is constantly fueled by Pinterest's fluid stream of amazingness. As a typical (almost 30) female, I have tried many-a-craft/recipie/life hack on Pinterest....
...which makes wonder what sort of black magic these Martha Stewart wanna-be's use to ensure that all of their projects look like Michaels Craft Store replicas, and their recipes look like Rachel Ray masterpieces. >.< (I also wonder where I can snag myself some of it.)
Okay - back on track - welcome to Kimnterest Blog Post #1!!
The Goal? Creamy Garlic Pasta.
I'm not going to lie, I went into this realizing that it's REALLY hard to mess up anything that has pasta and/or garlic. But, this is me... and I have a way of just "winging it" into culinary failure.
The recipe can be found HERE, on the Blog "The Cheese Pusher" (Someone who forces cheese on others? I love her already).
Here is a copy of the recipe with a few Kim's "tweeks". They are italicized:
Creamy Garlic Pasta:
2 tsp olive oil
4 cloves garlic, minced (Um, I think I actually used about 6. I just love garlic...)
2 tbsp butter
¼ tsp salt
½ tsp pepper
3 cups chicken stock
½ lb spaghetti or angel hair pasta (So, pasta comes in 1lb boxes... I used it all. Dude, I can't let it go to waste!)
1 cup grated parmesan cheese (Or 1.5 cup. Better yet, just wing this step... it creates cheesy goodness in your pan)
¾ cup heavy cream
2 tbsp chopped fresh parsley (BLECH - I say no. You are welcome to say yes and ruin your meal)
In a pot, bring the olive oil to medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Mix in the butter until melted. Add the salt, pepper and chicken stock. Raise the heat to high and let it come to a boil.
Once it is at a rolling boil, add the pasta and cook for as long as the box’s directions indicate. Reduce the stove to medium heat and mix in the parmesan until completely melted. Turn off the heat and stir in the cream and parsley. Serve immediately.
